i made this tonight. it was delicious. even the baby is eating it! amounts here are approximate. just taste and adjust as you go.
5 white onions, cut into thin rings
1/2 cup (1 stick) unsalted butter
2 tbsp - 1/4 cup sugar
1 tbsp salt
4 cans beef broth, or 8 cups water + beef bouillon ('better than bouillon' is what i used)
1/2 cup red wine
1 tsp ground thyme
1 tsp ground garlic
1 tbsp lemon juice
on medium-high heat, saute the onions in a skillet in the butter, adding sugar and salt after salted. cook until caramelized.
in a soup pot, combine remaining ingredients. bring to a boil. add onions after they're caramelized, then bring to a boil again. turn heat to medium-low and simmer for an hour.
